Simple Rice Noodles with Fish Sauce

Ingredients
For the Base Ingredients
- Dried Rice Noodles or Fresh Rice Noodles (flat or vermicelli)
- Garlic Chives
- Bean Sprouts
- Minced Garlic
- Eggs
- Bottled Fish Sauce (nước mắm)
For the Toppings
- Crushed Peanuts (optional)
- Huy Fond Chili Garlic Sauce (optional)
- Dipping Fish Sauce (nước chấm)
Directions
For the Base Ingredients
- If you have dried rice noodles, soak those in water for 1–2 hours before cooking
- Toss the noodles in a hot pan with some oil, and put a few dashes of bottled fish sauce so the noodles have an extra depth of flavour
- Next, toss together the garlic chives, bean sprouts, and minced garlic in a hot pan
- Lastly, whisk however many eggs you want, and cook them into a big sheet where you can cut into slices using a knife
- Set all of these cooked ingredients in their respective containers
For the Assembly
- Place a bed of cooked rice noodles
- Put your desired amount of garlic chives/bean sprouts mix
- Put your desired amount of shredded egg
- Sprinkle some peanuts, some chili garlic sauce, and as much dipping fish sauce as you’d like over it. ENJOY LUNCH! 😌
